Poultry Gravy

From Violet 4 tablespoons fat from poultry drippings 3 tablespoons flour 2 cups stock from cooking or canned Salt and pepper Heat fat. Add flour and blend over medium heat for 3 to 5 minutes. Add liquid in slow stream. Season with salt and pepper. Simmer, stirring constantly until thickened.
