Pineapple Casserole

  • 2 20 oz cans of pineapple tidbits, juice drained and reserved
  • 1 cup of sugar
  • 5 tablespoons of cornstarch (or flour)
  • 1 1/2 cups grated cheddar cheese
  • 1 cup crushed ritz crackers
  • 1 stick butter, melted

Preheat oven to 350 degrees. Mix together pineapple and grated cheese. In saucepan, combine pineapple juice, sugar, and cornstarch (or flour). Heat until mixture thickens. Add mixture to pineapples and cheese. Pour into casserole dish. Sprinkle with cracker crumbs. Drizzle melted butter over the crumbs. Bake for 30 minutes.
