Chow Chow (Pickles)

Recipe from Ella Marie.

  • 1 gallon of green tomatoes
  • 3 bell peppers
  • 3 cucumbers
  • 1 large cabbage
  • 5 hot peppers (jalapeños)
  • 1 1/2 cups salt
  • 6 cups sugar
  • 6 cups vinegar
  • 1 tablespoon pickling spice

Cut the tomatoes, peppers, cucumbers, and cabbage into a (very) large stock pot. Mix in salt, then (pour into cheesecloth bag and) drain for 5 hours. Clean out pot and combine sugar, vinegar, and pickling spice in it. Add vegetables this and bring to a boil. Divide the chow chow into hot sterilized jars (for canning).
